This book began after a long silence between us. Not because food fixed everything, but because cooking gave us something to do with our hands while our hearts caught up.

Heather & Hannah’s Fiskesuppe

Norway · No. 01

Creamy cod, shrimp & vegetable fiskesuppe. Based on three recipes, Heather’s adjustments, and Hannah’s fine sense of knowing exactly what it still needs.

  • Skinless wild cod1 piece
  • Skinless wild salmon1 piece
  • Shrimp10–12
  • Carrots, thinly sliced3
  • Fennel bulb, thinly sliced1
  • Crème fraîche½–1 cup
When hearts were too heavy or nervous systems and silence too loud
  1. Melt butter in a pot over medium heat.
  2. Add flour and whisk 1–2 minutes to form a smooth roux, no browning.
  3. Add the vegetables, coating with the roux: carrots, fennel, leek, potatoes.
  4. Cook 5–10 minutes until they start to soften and smell sweet.
  5. Slowly add fish stock while whisking until smooth.

The idea: Scandinavian restraint: air, hairlines, numbered everything, one cold blue. The whimsy is quiet and lives in the italic asides. Photos would sit large and alone, one per screen, like plates on a bare table.
