This book began after a long silence between us: cooking gave us something to do with our hands while our hearts caught up.

Heather & Hannah’s Fiskesuppe

Norway

Creamy cod, shrimp & vegetable fiskesuppe. Based on three recipes, Heather’s adjustments, and Hannah’s fine sense of knowing exactly what it still needs.

Ingredients
  • 1 piece skinless wild cod
  • 1 piece skinless wild salmon
  • 10–12 shrimp
  • 3 carrots, thinly sliced
  • 1 fennel bulb, thinly sliced
  • ½ to 1 cup crème fraîche
Method
  1. Melt butter in a pot over medium heat.
  2. Add flour and whisk 1–2 minutes to form a smooth roux.
  3. Add the vegetables, coating with the roux.
  4. Cook until they start to soften and smell sweet.

The idea: the Sunday cooking ritual itself. Butter yellow, tomato red, herb green. Cards with thick outlines and a little tilt, a wavy edge instead of a straight rule. The boldest and warmest of the three; whimsy out loud rather than in the margins.
